The Matsushima Tourism Association operates a Kaki-goya—or “oyster shack”—throughout the winter, a must-see for fans of the exquisite shellfish. Nestled on the southern end of the Sanriku coast, the waters off Matsushima provide the ideal environment for harvesting oysters. The intersection of warm and cold currents creates a plankton-rich habitat that helps the oysters thrive. While oysters in southern Japan are known for their size, the delectable ocean treats of Matsushima are luxuriously succulent, with a rich and faintly sweet taste.
